Ken Forkish opened Ken's Artisan Bakery in Portland, Oregon in 2001, serving freshly baked bread, croissants, cakes, coffee, and lunch items. After the success of Monday Night Pizza at the bakery, Ken opened Ken’s Artisan Pizza in 2006, serving Neapolitan-style pizzas nightly.
